1 pkg. boneless and skinless chicken breast fillets (about 1 1/4 lb.)
1 can (10-3/4 oz.) cream of chicken soup
2 cups MINUTE White Rice, uncooked
2 cups fresh or frozen broccoli florets
1 cup cheddar cheese, shredded
HEAT a small amount of oil in large skillet on medium-high heat. Add chicken. Cook 5 minutes on each side or until cooked through. Remove chicken. ADD soup and 1-1/2 cups water; stir. Heat to a boil. STIR in rice and broccoli. Top with chicken. Sprinkle with cheese. Cover. Cook on low heat 5 minutes or until cooked through. Great Substitute: Substitute Boneless & Skinless Chicken Thighs for Boneless & Skinless Chicken Breast Fillets and increase cook time to 7 minutes on each side.
