Cowboy Beans

1 lb. pinto beans
2 whole yellow chilies, chopped
1 can Ro-Tel diced tomato and green chili
1 med. onion, chopped
1/2 lb. ham hocks or shanks
1/8 tsp. cumin
3 cloves garlic, chopped fine
1 tsp. brown sugar
1 tsp. smoke flavor

Wash beans. Cover with water, add all ingredients and simmer until beans are tender and meat falls off bones. For spicier beans add chili powder or salad to taste (consistency should be that of thick soup).
