Hoppin' John

3 cans (15-1/2 oz. each) black-eyed peas, drained rinsed
2 cans (14-1/2 oz. each) chicken broth
1 pkg. (14 oz.) turkey smoked sausage, thinly sliced browned
2 cups onion, chopped
1 tsp. crushed red pepper
1 tsp. ground red pepper
3 cups MINUTE Premium White Rice, uncooked

MIX peas, broth, sausage, onion, and seasonings in medium saucepan; bring to boil. STIR in rice; cover. Simmer 10 minutes or until rice is tender. Makes 8 servings, about 1-1/4 cups each. Jazz It Up: Garnish with chopped fresh parsley. Nutrition Bonus: This meal is not only easy to make, it is low in both calories and fat!
